Make the ultimate bacon sarnie

Sophie Armitage won Danepak’s competition The Great British Bacon Off with her showstopper “Don’t Go Bacon My Heart”. We asked the 21-year-old student to let us in on her secrets.

“I grew up in Boston, so I was inspired by all the flavours and smells of a classic apple pie. And being an absolute bacon fanatic, I knew that the apple flavours and sweetness would complement the smoked bacon well.”

The ultimate bacon sandwich ()



– 1 apple, cored and thinly sliced

– 1 tsp cinnamon

– 1 large egg

– 3 tbsp whole milk

– 1 tsp vanilla extract

2 slices brioche

– 3 rashers of smoked bacon

– A drizzle of maple syrup

– A splash of sunflower oil


1 – Put the apple slices into a bowl with two tablespoons of water and the cinnamon. Pop this in a microwave for 60 seconds or until the apple softens. Leave to one side.

2 – Next, put the egg, milk and vanilla in a bowl and whisk with a fork until well combined. Soak the brioche in the mixture until they are well absorbed. Put them
side by side on a plate and pop them in the microwave for 90 seconds. Leave to one side.

3 – Heat the oil in a frying pan and fry the rashers of smoked bacon (or grill if you prefer). Then assemble the sandwich.

4 – Place the apple slices on one piece of eggy brioche, followed by the bacon and finish off with the final slice of brioche. Just before serving, drizzle the maple syrup all over and add a little sprinkle of extra cinnamon if you’d like.
