The recovery tray

Use performance nutritionist Ollie Matthew’s recovery tray after a busy day’s training 

Ingredients

  • 320g of penne pasta
  • 350g of chicken breast (4 breasts)
  • 100g of bell peppers (mixed)
  • 75g aubergine
  • 75g courgette
  • 75g of carrot
  • 150g spinach
  • Half a broccoli
  • 80g of mushrooms
  • 60g of green beans
  • One onion

Method

  1. Season chicken breasts, wrap in foil and bake at 220oc
  2. After 15 minutes, remove the foil and surround chicken with diced veg. Season with paprika, cumin or mixed herbs
  3. Allow the veg to soften and boil the pasta
  4. Add the pasta to the tray and mix with the veg
  5. Store any leftovers for later
