One-pot fish stew recipe

The Queiroz boys grew up cooking this after fishing trips with their dad. For would-be Olympic winners: “Fish is filled with protein, vitamin D and omega-3. It also lowers the risk of heart attacks and strokes. Most importantly, it is delicious, versatile and easy to prepare!”

Ingredients (Serves 2)

  • Frozen or fresh white fish fillets (1 per person, more if fillets are small)
  • Potatoes (2 large)
  • Tomatoes (2 large)
  • Onion (1 large)
  • Peppers (1 large)
  • Olives (handfull) 
  • ½ tsp of tomato purée
  • Salt (to taste)
  • Black pepper (to taste)
  • Olive oil



  1. Slice the tomatoes, potatoes, onions and peppers, to 1 cm thick.
  2. Pour olive oil into the pan, then layer in the ingredients, in this order: onions, tomatoes, peppers, olives, potatoes, then add salt and black pepper.
  3. Place the fish fillets on top of the potato slices.
  4. Repeat the layers – and add more salt and pepper.
  5. Cook it for 10 minutes on a medium heat, with the lid on.
  6. Mix the tomato purée with a cup of water and add it to the pan (add more if you like) and taste it to see if it needs more salt. Cook for a further ten minutes.
