Sumac chicken sandwich recipe

A good sandwich should be something to look forward to at lunch, and they don’t get much better than JC’s sumac chicken, topped with avocado, feta cheese and pomegranate. 

This sandwich has multiple nutritional benefits – sumac is a popular spice in Middle Eastern cuisine and is a fantastic antioxidant, while the chicken, avocado and feta give you a great one-two combo of protein and healthy fats, making it a solid fuelling option for the afternoon ahead. It’s also rich in copper, the micronutrient that helps form blood cells alongside iron.

Ingredients: (serves 1)

  • 1 chicken breast
  • 2 tsp sumac powder
  • ½ avocado
  • 20g feta cheese
  • ½ pomegranate
  • 2 thick slices of bloomer or sourdough


  1. Pre-heat the oven to 180°c.
  2. Slice the chicken into four or five strips, and place into a bowl. Add the sumac and mix well. Lay the chicken onto a baking tray and place it in the oven for eight minutes, or until cooked through.
  3. Peel and slice the avocado and put into a bowl. Add the feta cheese and pomegranate seeds and mix well.
  4. Add the chicken with the feta mix and the sandwich filling is ready.
