Copenhagen-style quinoa porridge recipe

Porridge doesn’t have to be dull; mix it up and try something new with JC’s Copenhagen-style quinoa porridge. The quinoa delivers a healthy dose of protein, while also packing in plenty of Omega 3 fats, which are essential for brain, muscular and cardiovascular health.

Ingredients:  (serves 1)

  • 60g quinoa
  • 225ml semi skimmed milk
  • 1 pinch of cinnamon
  • Juice and zest of ½ lemon
  • ¼ pomegranate seeds
  • 1 tbsp cocoa nibs
  • 1 tiny pinch ground cinnamon
  • 1 tsp maple syrup


1. Give the quinoa a good wash (to remove the saponin, which can give it a bitter taste).

2. Place the quinoa into a pan with the milk and cinnamon.

3. Bring the quinoa to the boil and turn down to a gentle simmer. Allow to cook gently for 15 minutes or until the milk has been absorbed and is cooked through.

4. Squeeze the lemon juice and add the lemon zest to the quinoa.

5. Add the pomegranate seeds and cocoa nibs to the quinoa and stir in with a spoon.
